Refrigerator Bran Muffins

1 ½ cups sugar

½ cups + 1 Tbs. shortening

2 ½ tsp. baking soda

½ tsp salt

1 cup 100% All Bran

2 cups 40% Bran Flakes

1 cup boiling water

2 eggs

2 ½ cups flour

½ qt. buttermilk

 

Directions:

Pour boiling water over All Bran. Cream shortening & sugar.  Add beaten eggs & buttermilk. Add 40% Bran Flakes, add flour, baking soda, and slat. Fold in soaked Bran.  Bake in greased muffin pan at 400° for about 15 minutes.  You can put the rest of the mix you made in a tightly covered container in refrigerator, bake as needed.  Keep up to 6 weeks in refrigerator.

Nice for breakfast or snack.
